Buñuelos De Pollo Con Queso

Instructions:

  1. Cut the chicken breasts into 1/3-inch pieces using a sharp knife. It’s easier to slice the chicken breast if partially frozen.
  2. In a large mixing bowl, combine the chicken pieces with eggs, mayonnaise, starch or flour, shredded mozzarella cheese, chopped dill, salt, and black pepper. Mix until well combined.
  3. Cover the bowl with plastic wrap and refrigerate for at least two hours, preferably overnight.
  4. Heat 2 tablespoons of oil in a large nonstick pan over medium heat.
  5. Drop heaping tablespoonfuls of the chicken mixture into the heated oil. Allow them to cook uncovered for a few minutes until the bottoms are golden brown.
  6. Use the back of a spoon to slightly flatten the tops of the fritters. Flip the fritters and continue cooking for another three minutes, or until both sides are golden brown and the chicken is cooked through.
  7. Optional: Prepare the garlic aioli by whisking together mayonnaise, minced garlic, lemon juice, salt, and black pepper in a measuring cup or small bowl until smooth.
  8. Serve the cheesy chicken fritters hot with the optional garlic aioli dip on the side.

Recipe Notes:

  • To ensure the chicken is fully cooked, you can check by slicing open a fritter; the interior should be fully white.
  • If the chicken fritters brown too quickly, reduce the heat and cook them at a lower temperature. Adjust the amount of oil as needed when making extra fritters.
